How should the FDA define "Gluten-Free"? Follow this link and read the FDA proposals, then submit your input to those making this decision. Our gluten free products include our Yogurts, Tofu Salads and Dips, and two of the Tamales – Chipotle Mushroom and Sweet Potato Pecan. They are made with NO wheat, rye, barley or oats. The Tofu Salads and Dips contain distilled grain vinegar and minute traces of alcohol (used as a preservative in the tamari), which could produce a gluten reaction in some people. Grain vinegars, alcohol and other fermented, distilled grain products fall into a contested grouping of foods that has had their gluten content greatly reduced during processing and are not generally excluded in a gluten free diet. Some people are so sensitive to gluten they have a reaction to glutamines, an amino acid component of gluten, and glutamates, which are a salt form of glutamines used in flavor enhancers such as MSG. These amino acids are found in almost all grains and legumes including corn and soybeans and many vegetables. These amino acids even show up in cow's milk because of the grain fed to the cattle.
