¼ c. olive oil 1 pkg. firm tofu, cubed
1 T. curry powder ½ -1 c. tamari or soy sauce
2 T. cumin 1 t. minced garlic (optional)
½ c. diced onions
Heat oil in large skillet. Add curry powder and cumin. Cook spices for a few minutes, then add onions and cook 3-4 minutes until onion gets soft. Add drained, cubed tofu. Coat with spice mixture, add tamari or soy sauce (add plenty here and cook it at med. high heat until liquid begins to boil off). Turn heat to low, and let tofu simmer for 25 minutes, until all liquid is absorbed. Use as wished in recipes.
