White Mountain Manicotti Serves 6-8
1 16 oz. container White Mountain Cottage Tofu
6 cups Italian style tomato sauce
1 (18 oz.) pkg. Manicotti noodles, spinach noodles preferably
Drop manicotti noodles into boiling water and boil for about 10 minutes or until noodles are almost “al dente”. Rinse and drain well.
Preheat oven to 350* F.
Pour 2 cups of the Italian style sauce on the bottom of a 9”x 13” pan. Fill each cooked noodle with 1/3 cup of the filling. Line the noodles up in the pan and cover with the rest of the sauce. Bake for about 30 minutes and serve.
